Smoky Guinness Chipotle Chili

A hearty chili with robust flavors of Guinness beer, chipotle sauce, and dark chocolate, perfectly balanced with ground beef and poblano peppers.

Method

  1. Heat a couple of tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chopped onions, poblano peppers, and minced garlic. Sauté for about 5 minutes until soft and fragrant.
  3. Add ground beef to the pot and cook until browned, breaking it up with a spoon. Drain any excess fat.
  4. Stir in paprika, cumin, garlic powder, oregano, onion powder, coriander, salt, and black pepper. Cook for another 2 minutes to toast the spices.
  5. Pour in chipotle sauce and Guinness beer. Stir to combine.
  6. Add San Marzano tomatoes (with juice) and black beans. Stir well.
  7. Stir in finely chopped dark chocolate until fully melted and incorporated.
  8. Reduce heat to low, cover, and let the chili simmer for 30-45 minutes, stirring occasionally.
  9. Taste and adjust seasonings as needed. Serve hot with garnishes like shredded cheese, sour cream, or green onions.

Notes

For a spicier kick, add more chipotle sauce or a pinch of cayenne pepper. This chili pairs perfectly with cornbread or tortilla chips.
