Smoky Guinness Chipotle Chili
A hearty chili with robust flavors of Guinness beer, chipotle sauce, and dark chocolate, perfectly balanced with ground beef and poblano peppers.
Method
- Heat a couple of tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.
- Add chopped onions, poblano peppers, and minced garlic. Sauté for about 5 minutes until soft and fragrant.
- Add ground beef to the pot and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Stir in paprika, cumin, garlic powder, oregano, onion powder, coriander, salt, and black pepper. Cook for another 2 minutes to toast the spices.
- Pour in chipotle sauce and Guinness beer. Stir to combine.
- Add San Marzano tomatoes (with juice) and black beans. Stir well.
- Stir in finely chopped dark chocolate until fully melted and incorporated.
- Reduce heat to low, cover, and let the chili simmer for 30-45 minutes, stirring occasionally.
- Taste and adjust seasonings as needed. Serve hot with garnishes like shredded cheese, sour cream, or green onions.
Notes
For a spicier kick, add more chipotle sauce or a pinch of cayenne pepper. This chili pairs perfectly with cornbread or tortilla chips.
