Cheesy Beef & Broccoli Rice Skillet

A quick and comforting one-skillet meal featuring ground beef, broccoli, rice, and gooey melted cheese. Perfect for a busy weeknight!

Method

  1. In a large skillet or pot, brown the ground beef over medium heat. Add the diced onion and minced garlic, cooking until softened.
  2. Stir in paprika, garlic powder, onion powder, smoked paprika (if using), and a pinch of salt and pepper.
  3. Add the uncooked rice to the skillet and stir for 1-2 minutes to coat it in the beef's juices and seasonings.
  4. Pour in 2 cups of water (adjust based on your rice package instructions). Bring to a boil, then lower the heat and cover. Let it simmer until the rice absorbs most of the water.
  5. When the rice is nearly cooked, stir in the chopped broccoli. Cover and let it steam for 5-7 minutes until the broccoli is tender.
  6. Once the rice and broccoli are cooked, stir in your Velveeta or other cheeses until melted and creamy. Taste and adjust the seasoning if needed.

Notes

For extra flavor, consider adding a dash of hot sauce or a sprinkle of shredded cheddar on top before serving.
