German 'Dutch Baby' Pancake with Apples
An airy Dutch baby pancake topped with caramelized Fuji apples spiced with cinnamon and nutmeg, perfect for an indulgent breakfast or brunch.
Method
- Preheat your oven to 425°F (220°C).
- In a blender or by hand, combine eggs, all-purpose flour, whole milk, granulated sugar, and nutmeg. Blend until smooth.
- Place 4 tablespoons of butter in a heavy 10-inch skillet and put it in the preheated oven. Once melted, add the batter and bake for 20 minutes until puffed and golden brown. Lower the oven temperature to 300°F (150°C) and bake for an additional 5 minutes.
- In a non-stick skillet, melt the remaining 4 tablespoons of butter over medium heat. Add diced Fuji apples and sauté for about 5 minutes until slightly softened.
- Add granulated sugar, cinnamon, and nutmeg to the apples. Cook until the sugar dissolves and begins to caramelize.
- Mix cornstarch with water and pour into the skillet. Stir until the sauce thickens and coats the apples.
- Remove the Dutch baby from the oven, cut into wedges, and top with the caramelized apples. Serve immediately.
Notes
Serve with whipped cream or maple syrup if desired.
