German 'Dutch Baby' Pancake with Apples

An airy Dutch baby pancake topped with caramelized Fuji apples spiced with cinnamon and nutmeg, perfect for an indulgent breakfast or brunch.

Method

  1. Preheat your oven to 425°F (220°C).
  2. In a blender or by hand, combine eggs, all-purpose flour, whole milk, granulated sugar, and nutmeg. Blend until smooth.
  3. Place 4 tablespoons of butter in a heavy 10-inch skillet and put it in the preheated oven. Once melted, add the batter and bake for 20 minutes until puffed and golden brown. Lower the oven temperature to 300°F (150°C) and bake for an additional 5 minutes.
  4. In a non-stick skillet, melt the remaining 4 tablespoons of butter over medium heat. Add diced Fuji apples and sauté for about 5 minutes until slightly softened.
  5. Add granulated sugar, cinnamon, and nutmeg to the apples. Cook until the sugar dissolves and begins to caramelize.
  6. Mix cornstarch with water and pour into the skillet. Stir until the sauce thickens and coats the apples.
  7. Remove the Dutch baby from the oven, cut into wedges, and top with the caramelized apples. Serve immediately.

Notes

Serve with whipped cream or maple syrup if desired.
